About the restaurant A taste of Normandy at the table of our 5-star hotel

At Château d'Audrieu, Chef Samuel Gaspar's cuisine tells a story: the story of a thousand-faceted Normandy. In the majestic setting of the Le Séran restaurant, where historic salons give way to three colorful dining rooms, you'll enjoy bold, colorful local cuisine.

An adept of the "circuit-court", Samuel Gaspar selects his produce from within a 60-kilometer radius: AOC Normandy cheeses, farmhouse butters, calvados and ice ciders, the region takes pride of place. The estate's kitchen garden perfumes each plate with aromatic herbs and edible flowers with singular notes. Homemade vinegars and honey from the Château's own beehives enhance the contemporary elegance of this land-sea cuisine.

Your taste buds will be delighted, and your memories unforgettable.

Chef Samuel Gaspar

Originally from Orléans, Samuel Gaspar cut his teeth in some exceptional establishments: from Fort de l'Océan in Croisic to La Scène in Paris, where he worked alongside chef Stéphanie Lequellec; he then became Second de Cuisine at Burgundy, then at the legendary Taillevent restaurant, which was awarded two stars. A lover of produce and the terroir, he now expresses his art at Le Séran through a vibrant and committed cuisine, where flavors don't cheat.

A gastronomy of heritage, producers and heart.

"I firmly believe that creativity flourishes when we honor the riches of our terroir. Every season, every product, is a new gastronomy to explore."
