At Château d’Audrieu, Chef Samuel Gaspar's cuisine tells a story: that of Normandy in all its many facets. In the majestic setting of Le Séran restaurant, where historic salons give way to three colorful dining rooms, you can enjoy bold and colorful local cuisine.

A fan of short supply chains, Samuel Gaspar selects his products from within a maximum radius of 60 kilometers: Normandy AOC cheeses, farmhouse butters, calvados, and ice ciders—the region takes center stage. The estate's vegetable garden adds unique flavors to each dish with herbs and edible flowers. Homemade vinegars and honey from the Château's hives enhance this contemporary, elegant surf and turf cuisine. Your taste buds will be delighted and you'll leave with lasting memories.

Chef Samuel Gaspar

Originally from Orléans, Samuel Gaspar cut his teeth in some exceptional establishments: from Fort de l'Océan in Le Croisic to La Scène de Paris alongside chef Stéphanie Lequellec. He then became sous chef at Le Burgundy, followed by the legendary two-Michelin-starred restaurant Taillevent. With a passion for local produce and terroir, he now expresses his art at Le Séran through vibrant, committed cuisine where the flavors are authentic. A gastronomy of heritage, producers, and heart. "I firmly believe that creativity flourishes when we honor the riches of the terroir. Each season, each product, is a new gastronomy to explore."

The restaurant is open every evening from 7:00 p.m. to 9:00 p.m., Tuesday through Saturday. It also welcomes groups of more than 8 guests.
