A fan of the short supply chain, Samuel Gaspar selects his products from a maximum radius of 60 kilometers: Norman AOC cheeses, farm butter, calvados and ice ciders, the region is in the spotlight. The estate's vegetable garden brings a unique flavor to every plate with its herbs and edible flowers. The homemade vinegars and honey from the Château's hives enhance this surf-and-turf cuisine with a contemporary elegance.

The Chef Samuel Gaspar

Originally from Orléans, Samuel Gaspar earned his stripes in exceptional establishments: from Fort de l'Océan in Le Croisic to La Scène de Paris alongside chef Stéphanie Lequellec; he then became sous-chef at Le Burgundy, then at the legendary two-starred restaurant Taillevent. A lover of produce and the land, he now expresses his art at Le Séran through vibrant and socially engaged cuisine, where the flavors speak for themselves.
