At Château d’Audrieu, Chef Samuel Gaspar’s cuisine tells a story: that of a multifaceted Normandy. In the majestic setting of Le Séran restaurant, where historic salons give way to three ornately decorated dining rooms, you can savor bold and colorful local cuisine.

A proponent of locally sourced ingredients, Samuel Gaspar selects his products from within a 60-kilometer radius: Normandy AOC cheeses, farm-fresh butter, Calvados, and ice ciders—the region takes center stage. The estate’s vegetable garden infuses every plate with herbs and edible flowers boasting unique flavors. House-made vinegars and honey from the Château’s hives enhance this land-and-sea cuisine, imbued with a thoroughly contemporary elegance.

Chef Samuel Gaspar

A native of Orléans, Samuel Gaspar honed his skills at some of the finest establishments: from Fort de l’Océan in Le Croisic to La Scène in Paris, where he worked alongside Chef Stéphanie Lequellec; he then became sous-chef at Burgundy, followed by the legendary two-Michelin-starred restaurant Taillevent. A lover of ingredients and local terroir, he now expresses his art at Le Séran through vibrant, purposeful cuisine where flavors shine through.

The restaurant is open every evening from 7:00 PM to 9:00 PM, Tuesday through Saturday.

It also accommodates groups of more than 8 guests.
