Originally from the Loire region, where his parents were cheese producers, chef Marc Fontanne honed his skills at prestigious establishments such as the Maison Pic in Valence and the Auberge des Templiers. At Fonscolombe, he offers sensitive, sensual creations which are steadfast in their dedication to the product, whether from neighboring producers or straight from the estate's organic vegetable garden.
His clear, vibrant and sometimes surprising dishes are a prodigious ode to Provençal and French tradition.
